I first made these Caramel Baileys Shakes at Christmas time last year and oh my goodness they were so good! Are they a drink? Are they a dessert? Are they a milkshake? I don’t know but I do know that you need to try them immediately.
These would work fantastically well at a dinner party to serve to guests at the end of the dinner and they’re super quick to whip up – just multiply the recipe for however many you need. It works best if your caramel sauce is at room temperature. If it’s still quite thick, gently warm it in the microwave for 10 seconds or so to loosen it up.
I usually crush the biscuits in a bag and use a rolling pin to do this which is much less messy than trying to do it straight onto a chopping board.

Salted Caramel Baileys Shake – The Recipe
Makes 1
INGREDIENTS
2 tsp caramel sauce
1 biscuit crumbled into crumbs
50ml espresso
25ml vodka
50ml baileys
4 ice cubes
METHOD
- Start by drizzling half of the caramel sauce around the inside of the glass. Cover the rim of the glass with the remaining caramel sauce.
- Spread out the crushed biscuits on a plate and dip the glass onto the biscuits, rim side down to cover the rim with the biscuit crumb.
- Put the espresso, vodka, baileys and half of the ice into a cocktail shaker and shake shake shake!
- Add the remaining ice into the glass, pour over the Bailey mixture into the glass and enjoy!
