Today is Shrove Tuesday, more commonly known in my house as Pancake Day (yay) and although I’m always up for pancakes, Pancake Day is the only day where its socially acceptable to have pancakes for breakfast, lunch and dinner.
This year I wanted to share some of my favourite ways to eat pancakes so I’ve written this post a how you can do pancakes three different ways:
Savoury Pancakes:
When I was younger, every Shrove Tuesday we used to have pancakes for dinner and my mum would always make me have a savoury pancake, usually cheese and ham, before I could have sweet pancakes which usually included ice cream, chocolate or lemon and sugar.
Now that I’m older, I actually prefer savoury pancakes and I’m much more likely to have a few savoury pancakes followed by just one sweet pancake which usually involves ice cream covered with Baileys (has anyone else tried this – it’s amazing).
You can do so much with savoury pancakes and include so many different fillings but the one I’ve written about below is my favourite – cheese with ham in the middle. I’d recommend doubling up the recipe if you’re cooking for a few people.
Savoury Pancakes – the recipe:
makes 4 pancakes
INGREDIENTS
100g Plain Flour
A pinch of salt
1 egg
150ml milk
150ml water
Sliced ham
Grated cheese
METHOD
- Put the flour in a bowl and add the salt
- Stir together so the salt is incorporated into the flour
- Add the water to the milk
- Make a well in the flour and add the egg
- Stir together whilst gradually adding in the liquid so that there are no lumps
- Heat some oil in a pan so that it is piping hot
- Add a ladleful of batter into the pan and quickly swirl it around the pan so that it reaches the edges
- After a minute, flip the pancake over
- Spread some ham over one half of the pancake and top with grated cheese
- Flip the other half of the pancake over the top of the loaded cheese and ham part and squash together to that the cheese starts to ooze out of the sides of the pancake
- Serve on a plate and top with extra grated cheese
Cheesy Baked Pancakes:
I first tried this a few years ago and couldn’t believe I’d never had it before. It feels like more of a meal because its baked in the oven and you can even prepare these a day in advance and just pop them in the oven when you’re ready. I just used cheese for these (can you tell it’s my favourite) but you could add onions, mushrooms and loads of other fillings to this delicious pancake recipe.
You’ll notice this follows the same basic pancake recipe as the savoury pancakes above so if you’ve mastered this, you can skip straight to step 10.
Cheesy Baked Pancakes – the recipe:
makes 4 pancakes
INGREDIENTS
100g Plain Flour
A pinch of salt
1 egg
150ml milk
150ml water
Grated cheese
White sauce:
10g butter
15g flour
200ml milk
METHOD
- Preheat the oven to 180 degrees
- Put the flour in a bowl and add the salt
- Stir together so the salt is incorporated into the flour
- Add the water to the milk
- Make a well in the flour and add the egg
- Stir together whilst gradually adding in the liquid so that there are no lumps
- Heat some oil in a pan so that it is piping hot
- Add a ladleful of batter into the pan and quickly swirl it around the pan so that it reaches the edges
- After a minute, flip the pancake over
- Once cooked, remove the pancake from the pan and allow to cool slightly
- To make the white sauce, melt the butter in a pan
- Add the flour and cook for a minute
- Gradually add the milk until the sauce is smooth and silky – you could even add some cheese here too
- Spread grated cheese all over the pancake and roll tightly
- Put in an oven proof dish, seamside down
- Cover with the white sauce and any remaining grated cheese
- Cook in the oven for 15 minutes
- Serve straight from the oven
Fluffy American pancakes:
Finally, American pancakes are typically thicker and smaller than the pancakes used in the above two recipes. They also contain sugar, making them delicisouly sweet and perfect as a breakfast or dessert. You can also freeze these so you have ready made pancakes whiners you fancy them!
